I'm originally from Beaufort, North Carolina, a small and historic port town in the heart of the Southern Outer Banks. My heritage goes way back, as my ancestors shipwrecked off these islands, forming the first villages in the late 1600’s.
I've returned home after traveling the world for many years as the chef on large private yachts, in international restaurants, and on private islands in the Caribbean. The world has been a wonderful teacher, and now I'm back to put a taste of the world into your dinner party, wedding, or any other celebrated event, or if you just don’t want to cook!
Being around an abundance of fresh seafood has always been the norm for me. My grandfather had several boats and we would use each one for either fishing, oystering, crabbing, and clamming. He also had a farm, so once you grow up on such fresh ingredients, you never want to cook with anything else! Local is where it’s at! When I worked on yachts, it was the same way. I sourced my ingredients from the local fishermen and produce stands in front of people’s homes. I always find it to be an adventure as well!
